Combo Salad
This salad is a common appetizer for housewarming parties as it looks very pleasing to the eyes and very easy to make. The ingredients are very flexible that you can use whatever salad ingredients in season. Just make sure you have good variety of color and texture and your dish will look and taste amazing. The mixing should be done on the table, so the salad is fresh and not soggy.
INGREDIENTS:
- 100g pork belly
- 100g shrimps
- 200g cucumber (core removed and julienned)
- 200g carrot (julienned)
- 200g lotus stem (julienned)
- 200g banana blossom (julienned)
- 100g red onion (julienned)
- 100g shredded beef jerky
- 6 tablespoons roasted sesame
- 2 tablespoons sugar
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 2 tablespoons minced garlic and chilli
- 4 tablespoons roasted peanuts
- 8 prawn crackers
PROCESS:
Step 1: To serve, pour the dressing over salad. Mix well. Then add roasted sesame, peanuts or prawn cracker chips. Serve on top of prawn/sesame cracker.
Step 2: Boil the shrimps for 3 – 5 minutes until the color changes to orange. Then peel, devein and slice each shrimp lengthwise in half.
Step 3: In a small bowl, combine the fish sauce, sugar and lime juice. Stir well to dissolve. Add minced garlic and chilli on top at last to keep it float.
Step 4: Arrange all the julienned vegetables aroung the plate together with the shredded beff/squid, pork and shrimps. Place the dressing bowl in the center of the plate.
